Bluffington Beets

If you're a 90's child like myself you've been aware of beets for a long time (thanks to one Doug Funnie) but have never made them a regular part of your diet.  Aside from having the low-calorie, high nutrient content that you expect in a veggie, beets also have a high nitrate content.  This makes beets an endurance performance booster.  You can get nitrates from more expensive and less natural sources, but why would you, when you can get them SAFELY, in a tasty dish.  Here are a couple of my own recipes that you should try.  Just beware, the beets will stain counter tops if you're not careful.  They will also add a colorful flare to your bathroom visits.


Warm Beet Salad

Add peeled beets, chopped beet greens, lettuce, green pepper and cucumber to a frying pan.  Fry in a little olive oil and a liberal amount of lemon (or lime) juice, until everything is nice and hot.  Put it on a plate with some sun flower seeds for extra crunch and it's ready to eat.


Beet Wraps

Add peeled beets, chopped beet greens, onion, tomato, and green pepper to a frying pan.  Fry in a little olive oil until its all nice and hot.  Place those contents inside a warm tortilla.  Add a little cheese for some protein and it's a second tasty dish full of beets.
