All you need is 4 ingredients and 20 minutes and you have a healthy and delicious sandwich. Take some raw salmon (actually I see no reason you can't cook it, if you have an aversion to raw fish) and slice it very thin. Place them on a freshly toasted english muffin (preferably a Thomas english muffin). Add some thin slices of cucumber and some neufchatel cheese and your ready to eat. It is perfect for the main dish of a light dinner, or lunch. Trade out the english muffin for a substantial cracker and you've got a great appetizer or party food. If you're a fan of hot stuff then add a little hot sauce to the mix.
